I recently came across a chimichurri recipe that I am dying to try some time.<br /><br />As for bone marrow, did you know that in China, there are restaurants that specialize in this dish? Bones are normally slow-cooked in a soup. When I visited in 2001, the specialty restaurants were serving these delicacies(?) in soups, and you get a straw to suck the marrow out of the bones. Authentic Chinese restaurants in N. America serve these soups.
